SHRIMP WITH DILL, LIME AND BOW TIE PASTA 12 ounces bow tie pasta 1 tablespoon olive oil ¼ cup finely chopped onion 3 cloves minced garlic 1 pound peeled and deveined medium or large uncooked shrimp 1 teaspoon lime zest 1 tablespoon fresh lime juice ¼ cup freshly grated Parmesan cheese ¼ cup fresh chopped dill Cook pasta according to directions: drain. In a large nonstick skillet on medium, heat oil. Add onion: cook 3 minutes or until softened. Add garlic: cook 1 minute. Add shrimp: cook, stirring occasionally. 3 to 5 minutes or just until shrimp turn pink. Stir in zest and juice. Toss shrimp with the pasta. Sprinkle with cheese. Top with dill and serve.
